The Sparkler:
50ml King of Soho Variorum Gin, 50ml Fruit Red wine, 1 teaspoon of clear, runny honey, 1 sprig of tarragon, 1 large piece of cinder toffee.
Crush the cinder toffee with the tarragon, add the honey and stir with the gin. Add the wine and the ice, and stir well until everything is mixed. Strain into a cocktail glass. -
